It appears that it is not possible to create a calculated column using formula builder, e.g. for a term grade, that uses weightings that ignores empty cells (e.g. if a student missed an assessment).
"Unfortunately AVERAGEIF function is not available on gradebooks to ignore 0s and/or empty cells, however I can see how this could be useful and encourage you to submit an idea to our iSAMS Ideas Portal."
